A sunshine state of mind – Take a leaf from the change in season, spring heralds golden sunshine and clear blue skies. Guests will grin when they see this cheery choice of colours – they holler happiness, a perfect sentiment for the day.

Pour 1 measure of vodka and a squeeze of lime juice into a chilled tumbler. Half fill the glass with freshly squeezed pineapple juice and top with icy-cold sparkling mineral water. Use a melon baller to make small pineapple ball garnishes and float three in each glass.
