When the temperature goes down, turn up the heat at a cosy cellar party with the girls. It’s a bridal shower with a difference.
Crack open some bottles, nestle into comfy cushions and have a fine time. Flickering flames always help the mood, light an open fireplace or rows of glimmering, oversize candles, which will feel special.
French Onion Soup
50 gm butter
1 tbsp olive oil
700 gm brown onions, peeled and thinly sliced
1 clove garlic, finely chopped
1.2 litres good beef stock
250 ml dry white wine
1 baguette, sliced diagonally into 2cm slices
200 gm gruyère cheese, grated
Place a saucepan over medium heat and melt the oil and butter together. Add the onions and garlic and cook, stirring frequently until caramelised. Add the stock and white wine, season to taste then let simmer gently for about an hour.
Ladle the hot soup into 6 small oven proof bowls, top with the baguette slice and sprinkle thickly with the cheese. Place under grill until the cheese is golden and bubbling. Serve immediately.
Note: soup can be made the day before—just reheat and ladle into bowls before serving.
